Every year at Christmastime, I make Rolo Pretzel Turtles. I have no idea why I've never shared them on the blog...WHAT IS WRONG WITH ME?!?
When I spied a version made with candy corn and peanuts on Greens & Chocolate last year, I was sold. Since last fall, I've made approximately 792 batches.
Way back when I managed the Mary Engelbreit store in Dallas, one of the ladies who worked there (Hi, Judy!) brought a mix of candy corn and salted peanuts to work. I'd never heard of such a thing, and not being the biggest fan of candy corn, I wasn't expecting much. Y'ALL. From that moment on, I never eat candy corn without salted peanuts being involved in some way.
These little candy corn turtles ane chewy, chocolaty, salty, and sweet. Basically everything you want out of life. They're dangerously addictive and quick to whip up...
...unwrapping all of those Rolos is the most time-consuming part.
When you buy peanuts for these, be sure to check the label. The peanuts that look like the "regular" ones actually are seasoned with garlic and onion powder. We don't want that. Look for the peanuts labeled as "lightly salted."
After I chop the peanuts, I toss them with just a bit of fine sea salt. It takes "lightly" salted to perfectly salted.
For the pretzels, try to find the Butter Snaps. The shape is just right and the buttery flavor adds to the deliciousness. If you can't find them, small regular pretzels will work just fine. Place the pretzels in a single layer on a cookie sheet.
Place one Rolo on top of each pretzel. Bake for 5 minutes.
Immediately after removing from the oven, place a candy corn on each Rolo. Sprinkle with the chopped peanuts, using all of the tiny bits as well.
Let cool and try not to eat all of them in a span of 5 minutes. It's tough.
Candy Corn Rolo Turtles
Butter Snaps pretzels
Rolos chocolate candies, unwrapped
Candy Corn
Lightly salted peanuts, chopped and tossed with a bit of fine sea salt
Place the pretzels in a single layer on a cookie sheet. Place one Rolo on top of each pretzel. Bake for 5 minutes.
Immediately after removing from the oven, place a candy corn on each Rolo. Sprinkle with the chopped peanuts, using all of the tiny bits as well.
Let cool for several minutes, then refrigerate to set completely. Once set, store at room temperature.
