Here it is. The last little recipe for your Christmas baking list. Frosted Peppermint Cookie Bars.
Take one look at that pink frosting and you're in, right? A thick cookie base is rich with butter and vanilla and studded with peppermint chunks. (Don't worry if you can't find them; I have a workaround for you.) The bars are slathered with a pink peppermint frosting that is just the right amount of mint.
I don't know about you, but I can eat about 1,000 of anything mint flavored. It doesn't seem filling, just...refreshing.
These whip up pretty quickly, so if you're worn out from cookie decorating and cutting out gingerbread cookies (raises both hands), these bars are a one-pan wonder. I hear Santa likes pink frosting anyway.
