Pumpkin Bacon Carbonara
Don't put away your cans of pumpkin quite yet...it IS technically still fall, after all!
And yes, you have the right blog. Contrary to popular belief, we do eat things other than sugar at the Edwards' house. *gasp*
Over on The Pioneer Woman Food & Friends today, I'm sharing a recipe for Pumpkin Bacon Carbonara. Traditional carbonara is simple and comforting; it's basically pasta with pork (guanciale or pancetta), eggs, and cheese.
Here, I've used bacon and canned pumpkin for a slightly heartier dish that is perfect for a chilly evening. The eggs in the dish are key. They add a silky, creamy texture without adding cream.
