Sweet on Trader Joe's Sunday : Pumpkin Chocolate Chunk Oatmeal Cookie Mix

It is pumpkin season at Trader Joe's - the most wonderful time of the year. For my first trip to Trader Joe's since the pumpkin goods hit, I loaded up on 2 boxes of Pumpkin O's, 4 boxes of Pumpkin Ginger Hold the Cones, 3 Butternut Squash Pizza Crusts, and one package of Butternut Squash Mac & Cheese (and two avocados, which really didn't fit the theme).

Anyhoo...Mr. E and I also chose Trader Joe's Pumpkin Chocolate Chunk Oatmeal Cookie Mix. We had a lazy-ish Sunday and whipped them up while watching the Astros this afternoon. A 22-ounce container of cookie mix runs $3.99 and makes approximately 2 dozen cookies.

To the mix, you'll add one egg, 1/2 cup salted butter, and a bit of water. It all gets mixed at once and is ready to scoop onto cookie sheets. I got 23 cookies using my 2-tablespoon - #40 - (the package says "24 medium size cookies," so I was impressed by the accurate estimation.

He (Mr. E) says: These have a BOLD pumpkin flavor, which could almost overpower the chocolate and oatmeal, but doesn't. The texture is excellent and could probably soak up some ice-cold 2% milk, but I neglected to test that out.

She says: I'm a pumpkin lover through and through, and these DELIVER on the pumpkin flavor. Making pumpkin cookies is tough because they're almost invariably cakey. These are no exception; I'm almost tempted to bake them again in mini muffin cups. Points for spice and pumpkin flavor, the oatmeal is a nice addition, too. I wish they would have spread a bit more into cookies like pictured on the package, and it might go without saying that bigger chunks of chocolate wouldn't be a bad idea. If you need a quick pumpkin something, I think you'll be happy with these.
