This Irish Potato Cake recipe was updated from a cookbook published in the 1930s! The potatoes keep the cake moist while whipped egg whites keep the cake from getting heavy. Spiced and nutty, this cake hits the spot any time of year - but especially on St. Patrick's Day. It's a comforting cake...which is really what we all need right now. Comfort.
A note about the potatoes: traditionally, this is made with leftover mashed potatoes, but you can use quickly made mashed potatoes from potato flakes, like these. Works like a charm. (Just be sure not to use garlic mashed potatoes, please!)
