This coconut butter banana smoothie is simple to make - no chopping fruit required - and it's insanely satisfying. In case you're wondering, it's dairy-free, gluten-free, and has no added sugar. What???
Let's make it! You'll need rice milk. (Remember we made some last week?) The other players: a ripe banana, coconut butter, cinnamon, sea salt, and ice.
If you've never tried coconut butter, well, you're in for a treat. It's like coconut-flavored peanut butter. It's all-natural, spreadable, thick, luscious...and perfect in this smoothie as it adds a bit of fat and great texture. I've found coconut butter at Whole Foods and on Amazon. Stock up because I have more coconut butter goodies coming your way.
Put everything in the blender and blend away! (I like my smoothies not-so-icy, so if you like more of a brain freeze consistency, add more ice than is called for in the recipe.)

Coconut Butter-Banana Smoothie
1 cup vanilla or regular rice milk (homemade preferred)
3/4 cup ice
1 medium to large banana
1 tablespoon coconut butter
1 teaspoon cinnamon
pinch fine sea salt
Place rice milk and ice in a blender. Add the remaining ingredients. Blend until smooth. Serve. Makes 1 large or two small smoothies.
