What's a girl to do? Make OREO Shamrock McFlurry®-inspired cookie bars, of
course! With a hint of mint in both the cookie base and the frosting, these
bars are buttery, strewn with OREO cookies, and perfect for St. Patrick's
Day!
Now, I guess I can't call these COPYCAT OREO Shamrock McFlurry® Cookie Bars
because A. I don't know what an OREO Shamrock McFlurry® tastes
like, and B. they don't offer a cookie bar version, but a girl can
imagine.
OREO Shamrock McFlurry® Cookie Bar ingredients
The ingredients for the bars are pretty simple. Butter, flour, eggs...the
usual suspects.
You will need MINT extract. Don't be tempted to substitute peppermint extract
that you might have used to make
Butter Mint Cut-Out Cookies
or
Chocolate-Ribboned Peppermint Ice Cream.
I used just a smidge of green food coloring in the frosting, using
Americolor Leaf Green Gel Paste food coloring. I am serious about a smidge; I literally dipped a toothpick into the
coloring and swiped that through the icing at the end of mixing. It gives it
that perfect "mint chocolate chip" color, but you can skip it
altogether.
How to Bake OREO Shamrock McFlurry® Cookie Bars
First up, you'll make the dough. It's super easy and familiar. Cream butter
and sugar, add eggs and extracts, mix in the flour.
At the end, you'll stir in some chopped Oreos.
The dough is quite sticky but can be spread with an
offset spatula.
Bake! Look how golden and beautiful it is with those chunks of
Oreos throughout. You could serve them as is.
Buuuuuuut, let's make the frosting. It definitely adds to the "Oreo Shamrock
McFlurry" vibe. It kinda looks like ice cream, right?
Again, this is an easy frosting to mix up. Butter, powdered sugar, milk, mint
extract, and a bit of green food coloring if you want it.
Spread the frosting on, then top with crushed Oreos.
OREO Shamrock McFlurry®-Inspired Cookie Bars
for the bars:
2 cups unbleached, all-purpose flour
1 teaspoon baking powder
1/2 teaspoon kosher salt
1 cup packed light brown sugar
1/2 cup granulated sugar
1 cup salted butter, room temperature
2 eggs
1 teaspoon vanilla extract
1/2 teaspoon mint extract
1 cup chopped Oreo cookies
for the frosting:
1/2 cup unsalted butter, room temperature
2 1/2 cups powdered sugar
2 teaspoons milk
1/4 teaspoon mint extract
green gel paste food coloring, optional
1/2 cup crushed OREO cookies
Preheat oven to 350. Lightly grease a 9 x 13-inch baking pan. Line with foil.
Grease the foil.
[NOTE: the foil makes it easy to lift the bars out for cutting but is not
necessary. Skip and grease only the pan, if desired.]
Whisk flour, baking powder, and salt together. Set aside. Cream butter with
brown and granulated sugars for several minutes until creamy and fluffy. Beat
in the eggs, scraping bowl as needed. Mix in extracts.
On low speed, add the flour in two additions, mixing until incorporated. Fold
in the chopped cookies or mix in on low.
Use an offset spatula to spread evenly in the pan. Bake for 24-26 minutes or
until golden and baked through. Let cool completely before frosting.
Make the frosting. Beat butter until creamy. Mix in the powdered sugar 1/2 cup
at a time. Add in the milk and extract, beating for a few minutes until
spreadable. If the frosting seems dry, add in milk a 1/2 teaspoon at a time.
Dip a toothpick into the food coloring and swipe through the icing. Mix until
distributed evenly.
With an offset spatula, frost the bars. Top with crushed Oreos.
