The cookies are too good to live in obscurity. I brought the recipe out,
dusted it off a bit, and present it to you today. Sandy in texture and
satisfyingly crumbly, these peanut butter cookies are easy enough to make any
day of the week. This is a great recipe to go to when you need cookies in a
hurry!
You probably have all of the ingredients in your kitchen right now. You'll
need peanut butter, sugar, an egg, baking soda, vanilla, and flaky sea salt.
That's right - only 6 ingredients are needed in the flourless peanut butter
cookies, and one of them is the finishing salt!
What peanut butter should I use to make cookies?
Be sure to reach for peanut butter that doesn't need to be stirred before
using. You don't want the strictly all-natural with the oil on top. I like
Simply Jif. It's smooth and creamy with not much added sugar or sodium.
I recommend
FalkSalt. It has gorgeous, big, flaky crystals that you'll crush while sprinkling
over the cookie dough. You've seen me use it on the
Chocolate Hazelnut Caramel Ice Cream Pie
and
Salted Double Chocolate Chewies. If you don't have FalkSalt, use any other flaky sea salt.
The dough mixes together in a flash! Once mixed, you'll portion onto cookie
sheets.
I use a
2-teaspoon scoop
to portion the cookie dough. You know me, I'm prone to bust out the
2-TABLESPOON scoop for making cookies (See:
cherry chocolate chip oatmeal cookies
or
chickpea flour chocolate chip cookies), but the 2-teaspoon scoop is perfect for this recipe.
Before sliding the cookies into the oven, sprinkle with the flaky sea
salt.
Isn't that salt so, so pretty?!? Ok, now bake!
Easy Flourless Peanut Butter Cookies
1 cup creamy peanut butter (not all-natural)
1 cup granulated sugar
1 egg
1 teaspoon vanilla extract
1 teaspoon baking soda
flaky sea salt, such as
FlakSalt
Preheat oven to 375. Line cookie sheets with parchment paper.
Mix the peanut butter, sugar, egg, vanilla, and baking soda together. Use a
2-teaspoon scoop to portion onto prepared sheets. Sprinkle each cookie with a
pinch of sea salt. Bake for 10 minutes. Remove to a wire rack to cool
completely.
The cookies bake up just beautifully. The recipe makes about 27 cookies. Not a
ton, but just enough.
