Packed with protein and sweetened only with date syrup, Breakfast Cottage Cheese Peanut Butter Mousse feels like you're having dessert for breakfast - especially when topped with just a few peanut butter pretzels and chocolate chips.
Breakfast Cottage Cheese Peanut Butter Mousse is super easy to make. You can whip it up in less than 5 minutes. It's best if it chills in the refrigerator for about 30 minutes before eating. Whip it up, make the bed, get dressed, and come back to breakfast. (Although, sometimes, I just can't wait).

I've only used good culture organic cottage cheese. I love the texture and the taste. It only has a handful of ingredients with no gums, preservatives, or fillers. You might have seen me mention it when making our favorite avocado toast.
Let's make Breakfast Cottage Cheese Peanut Butter Mousse
Put cottage cheese, peanut butter (smooth or crunchy), and date syrup in a blender. This is the perfect opportunity to use the small blender cup like the one with our Blendtec.
Whip until smooth.
Pour into a glass or jar (I'm partial to reusing the cute Bonne Maman jars) and refrigerate for 30 minutes.
Top with a smattering of chocolate chips and a few mini peanut butter pretzels. Sliced banana would be great on this, too!
Breakfast Cottage Cheese Peanut Butter Mousse
(serves 1)
1/2 cup cottage cheese (I like good culture)
1 1/2 tablespoons peanut butter
1 tablespoon date syrup
chocolate chips
mini peanut butter pretzels
Spoon cottage cheese, peanut butter, and date syrup into a blender. If you have a small blender cup, this is a good place to use it. Blend until smooth and creamy. Pour into a glass or jar and refrigerate 30 minutes or more.
After 30 minutes, sprinkle with chocolate chips and a few mini peanut butter pretzels. Stir and devour!
