Listen, I know we're going light on the sweets after Christmas (my body is 73% gingerbread cookie at this point), but I am here to give you an excuse for cake - Epiphany on January 6th.
The great thing about this Galette des Rois, or French King Cake, is that it's easy to make and not too heavy. No frosting, no cake pans, no crumb coating.
You will need to decide if you want to make the almond version or the chocolate version.

What's the difference between an Almond and a Chocolate Galette des Rois (French King Cake)?
Both have a crispy, flaky shell made with rough puff pastry like you've seen on the Great British Baking Show. Now you must choose your filling.
I mean, can we just pause to look at that flaky, golden shell for a minute?
ALMOND GALETTE des ROIS
The traditional Galette des Rois has an almond filling. My recipe is flavored with orange for a bit of brightness and freshness.
CHOCOLATE GALETTE des ROIS
The chocolate Galette des Rois is filled with a rich, dark chocolate almond filling. The chocolate flavor is enhanced with vanilla and a bit of espresso powder. The filling does not taste like coffee - the espresso powder deepens the chocolate flavor.
The top of the pastry can be left simply or scored in a decorative pattern. I can't decide if I like the soft swirls or the herringbone best.
