I am not one to sneak veggies into foods. I told my husband what I was making...and he forgot. So, he kept coming back to the fridge for the cookie dough bites, totally oblivious to the chickpeas, etc. They're that good. He FORGOT they were anything but a sweet treat. WIN.
I told you guys that my goal this year is to EAT MORE PLANTS. (Without giving up cookies.) Listen, I'm pretty good about eating salads on the regular, but I also fall into the trap of "Oh, this Whataburger has lettuce AND tomatoes! And what are fries but a serving of potatoes."
You'll be shocked, shocked I tell you, to learn that I have a sweet tooth. I also CRAVE chocolate. Did you know that people who don't like chocolate have different gut microbes as people who do? It's kind of fascinating.

Well, let's skip the discussion of gut microbes and get right to the chocolate. Yes, these cookie dough bites are made mostly from chickpeas, but they have the satisfying texture and taste of chocolate cookie dough.
What are the key ingredients in Chocolate Chocolate Chip Chickpea Cookie Dough Bites?
Chickpeas, obviously.
You'll also want to use almond butter. I like vanilla almond butter for these. My grocery store has a good store-brand and Justin's Vanilla Almond Butter is also delish!
Date Syrup and Coconut Sugar. Date Syrup provides sweetness and moisture, while coconut sugar brings that toasty flavor that brown sugar would in a regular cookie dough.
Chocolate Chips. Use bittersweet or semisweet here, but I'd look for chips that are the typical size, not larger discs.

CHILL them before eating. Before chilling, the chickpea scent is stronger. Something magical happens in the chilling process. The flavors marry, the chickpeas mellow, and the texture becomes like cookie dough.
Oh! Y'all...I calculated the Weight Watchers points (WW points) on these and they are 2 points a piece. Better yet, you can have 2 of them for just 3 points! A low-point chocolate WW treat that doesn't involve artificial sweeteners and is, dare I say it, healthy? Sounds good to me!
How to Make Chocolate Chocolate Chip Chickpea Cookie Dough Bites
Drain and rinse the chickpeas. This will take a few minutes, and don't be alarmed if, as you rinse, you see a little foaminess. That's the aquafaba. As a matter of fact, you can make Dairy-Free Chocolate Mousse with it!
Pat the chickpeas dry. They'll still feel a little damp; just get all the water off them.
Whir the chickpeas with the other ingredients, except the chocolate chips.
Once that forms a "dough," add the chocolate chips and pulse until combined.
Roll into balls. I like to use a small cookie scoop to make them uniform, but because you're not baking them, it really doesn't matter.
Pop them into the fridge for at least 30 minutes before eating. Keep in an airtight container to eat throughout the week!

Chocolate Chocolate Chip Chickpea (!) Cookie Dough Bites
YIELD: ~28 bites
PREP TIME: 15 minutes
CHILL TIME: 30 minutes
15-ounce can chickpeas
1/3 cup oat flour
1/4 cup vanilla almond butter
2 tablespoons date syrup
2 tablespoons coconut sugar
1 1/4 teaspoons vanilla extract
1/2 teaspoon kosher salt
1/4 teaspoon cinnamon
pinch espresso powder, optional
heaping 1/3 cup chocolate chips, semisweet or bittersweet
Drain and rinse chickpeas; pat dry. Place chickpeas, oat flour, almond butter, date syrup, coconut sugar, vanilla, salt, cinnamon, and espresso powder (if using) in a food processor. Pulse to combine, then run on high until a dough forms.
Add chocolate chips. Pulse to combine, then whir just briefly to incorporate into the dough. Remove blade and stir.
Roll into balls, about 2 teaspoons each. Refrigerate in a single layer for at least 30 minutes. Cookie dough bites may then be transferred to an airtight container. Store in the refrigerator.
