Chocolate Chocolate Chip Chickpea (!) Cookie Dough Bites
YIELD: ~28 bites
PREP TIME: 15 minutes
CHILL TIME: 30 minutes
15-ounce can chickpeas
1/3 cup oat flour
1/4 cup vanilla almond butter
2 tablespoons date syrup
2 tablespoons coconut sugar
1 1/4 teaspoons vanilla extract
1/2 teaspoon kosher salt
1/4 teaspoon cinnamon
pinch espresso powder, optional
heaping 1/3 cup chocolate chips, semisweet or bittersweet
Drain and rinse chickpeas; pat dry. Place chickpeas, oat flour, almond butter, date syrup, coconut sugar, vanilla, salt, cinnamon, and espresso powder (if using) in a food processor. Pulse to combine, then run on high until a dough forms.
Add chocolate chips. Pulse to combine, then whir just briefly to incorporate into the dough. Remove blade and stir.
Roll into balls, about 2 teaspoons each. Refrigerate in a single layer for at least 30 minutes. Cookie dough bites may then be transferred to an airtight container. Store in the refrigerator.
