Egg-Free White Chocolate Sprinkle Cookie Bars
3/4 cup unsalted butter, room temperature
1 cup sugar
1 teaspoon vanilla
3/4 teaspoon fine sea salt
2 cups unbleached, all-purpose flour
1 tablespoon milk
1 cup white chocolate chips
1/3 cup multi-colored jimmies
Line an 11x8" rimmed cookie sheet with parchment. Preheat oven to 350.
Cream butter and sugar several minutes until fluffy. Mix in the vanilla and salt. In two additions, mix in the flour on low speed. Once combined, beat in milk. Fold in (or mix on low) the white chocolate chips and sprinkles.
Press into the prepared pan and bake 30-40 minutes or until set and golden. Cool in the pan, then remove and cut into wedges.
