Good & Garlicky Pizza Sauce
olive oil
garlic, 2 large or 3 small, mincedolive oil
1 (15 oz.) can crushed tomatoes
1/2 teaspoon dried oregano
1/4 teaspoon dried basil
pinch (or two) crushed red pepper flakes
1 glug red wine (yes, glug...or 2-3 TBSP)
kosher salt
freshly ground black pepper
Heat some olive oil over medium heat.

Heat some olive oil over medium heat.
Add the garlic, stir and cook for about 30 seconds to a minute. You really don't want it browned, just softened a bit and flavoring the oil.
Next, add the tomatoes and stir. Add the spices (I normally eyeball the amounts, so feel free to do the same. If I were making it just for me, I would add more red pepper).
While that's cooking, look for an open bottle of wine. You have one, right? Feel free to open one...or totally omit this part...it's fine. Add a glug of wine to the sauce. Be sure to use a wine that you would drink. This is a good excuse to taste test.
Reduce the heat to medium-low and cook until combined and thickened. Add a few turns of freshly ground black pepper and about 1/2 teaspoon of kosher salt. If the sauce starts bubbling, lower the heat.
Makes enough to cover two pizza crusts.
