OREO Shamrock McFlurry®-Inspired Cookie Bars
for the bars:
2 cups unbleached, all-purpose flour
1 teaspoon baking powder
1/2 teaspoon kosher salt
1 cup packed light brown sugar
1/2 cup granulated sugar
1 cup salted butter, room temperature
2 eggs
1 teaspoon vanilla extract
1/2 teaspoon mint extract
1 cup chopped Oreo cookies
for the frosting:
1/2 cup unsalted butter, room temperature
2 1/2 cups powdered sugar
2 teaspoons milk
1/4 teaspoon mint extract
green gel paste food coloring, optional
1/2 cup crushed OREO cookies
Preheat oven to 350. Lightly grease a 9 x 13-inch baking pan. Line with foil. Grease the foil.
[NOTE: the foil makes it easy to lift the bars out for cutting but is not necessary. Skip and grease only the pan, if desired.]
Whisk flour, baking powder, and salt together. Set aside. Cream butter with brown and granulated sugars for several minutes until creamy and fluffy. Beat in the eggs, scraping bowl as needed. Mix in extracts.
On low speed, add the flour in two additions, mixing until incorporated. Fold in the chopped cookies or mix in on low.
Use an offset spatula to spread evenly in the pan. Bake for 24-26 minutes or until golden and baked through. Let cool completely before frosting.
Make the frosting. Beat butter until creamy. Mix in the powdered sugar 1/2 cup at a time. Add in the milk and extract, beating for a few minutes until spreadable. If the frosting seems dry, add in milk a 1/2 teaspoon at a time. Dip a toothpick into the food coloring and swipe through the icing. Mix until distributed evenly.
With an offset spatula, frost the bars. Top with crushed Oreos.
